Watermelon Salsa

We had a RS Salsa Night this past week. Everyone brought a different type of salsa. I chose to bring a Watermelon Salsa. It was so yummy! There are several recipes for it, but I like this one the best.


Mix 2 tbs brown sugar with ~2 freshly squeezed limes in bowl (1/4 cup lime juice).
Add the following:
3 cups Watermelon
1/2 cucumber
1/3 c cilantro
1/2 jalepeno
1/2 c minced red onion
1/4 c mint leaves
Salt to taste
Toss and refrigerate overnight. Delish!

There were so many different varieties of salsa: Mango salsa, Peach salsa, Avacado salsa, etc...
I was in heaven all night! So, what's your favorite!?!

Salsa is one thing that I have not truly learned how to make well LOL I know it's easy, but I just don't know what to do or how to make good. The last time I tried, it was kind of watery and I did not have the right proportions. Someday I will learn! Or, share your own recipe :)

oooo, chris' gma makes wonderful salsa/chile. i finally got her to write it down. (she always says, a lil bit of this...a lil bit of that! lol) i'll give it to ya if you like...you gotta love cilantro, though...that is a must...
that suprises me about you..i figured you were good at everything else in the kitchen, mexican salsa would be included! :)
